Abstract
The crude enzymes obtained from Candida rugosa yeast grown in different experimental conditions show a different relative enzymatic activity both in hydrolysis and in synthesis reactions compared to the commercial lipase. The preequilibration of crude lipase with lactose improves the synthetic activity. © 1998 Elsevier B.V. All rights reserved.
