Recent changes in legislation, related to livestock feeding (ban on antibiotics, other growth promoters and also meat meals), have forced to modify swine feeding. All these changes are promoting an increase in animal health risks and a decrease in the productive performances. Currently, big efforts are been made to develop and evaluate new additives and feedstuffs for piglet feeding. However, less attention has been paid to growing and fattening pigs. in this case, appears reasonable to focus on the study of the binomial structural-functional properties of the main nutrients in general and carbohydrates in particular. The objectives of the present project are three: 1) to integrate new protocols and methods coming from the Animal Nutrition and Animal Health fields in the study of this problem, 2) to characterise the carbohydrates fractions of the main feedstuffs used in swine feeding, and 3) to study the adaptation process of growing and fattening pigs to different dietary carbohydrates and its effects on the productive performances, digestive and metabolic features, the stability of the intestinal microflora and morphofunctional and inmunitary responses
