Resum

The interfacial stress has been identified as the major factor responsible for papain deactivation during the synthesis of Gly-Phe in a two-liquid-phase system. The enzyme has been stabilized by the addition of a surfactant (Tween 80) to the reaction mixture. The yield was thereby increased from 40% to as much as 70% under the given conditions. It has also been found that papain stability in a two-liquid-phase system is more closely related to interfacial tension and droplet size than to log P. © 1992 Elsevier B.V.
