Description

DIFFERENT MICROORGANISMS ARE RELATED TO THE FORMATION OF BIOFILMS ON SURFACES, CURRENTLY BEING THE MOST FREQUENT CAUSE RELATED TO THE ORIGIN OF OUTBREAKS OF FOODBORNE DISEASES REPORTED WORLDWIDE. CONSEQUENTLY, THE DEVELOPMENT OF SOLUTIONS TO PREVENT THE FORMATION OF BIOFILMS WILL GENERATE A SCIENTIFIC, SOCIAL AND ECONOMIC IMPACT. AT THE SAME TIME, THE DIRECT DETECTION OF THE PRESENCE OF BIOFILMS ON SURFACES IS INTENDED, APPLYING BIOTECHNOLOGICAL SOLUTIONS. THE USE OF NATURAL PROTEINS, AND INCLUDING THEM IN ADVANCED CLEANING PRODUCTS, HAS BECOME AN IMPORTANT TECHNOLOGICAL OBJECTIVE, INCLUDING THE OPTION OF CONSIDERING SYSTEMS FOR THE DETECTION OF UNSAFE AREAS, WHICH WILL BE A MILESTONE, BY ALLOWING CRITICAL AREAS TO BE MARKED AND GUARANTEEING YOUR CONTROL. THIS WILL MAKE IT POSSIBLE TO APPLY AN EFFECTIVE SOLUTION THAT GUARANTEES INCREASINGLY SAFE PRODUCTS, WITH REDUCTIONS IN MANUFACTURING COSTS. PRODUCTION. WITH ALL THIS, A SOCIOECONOMIC BENEFIT IS EXPECTED: THE REDUCTION OF THE INCIDENCE OF RISKS DERIVED FROM THE PRESENCE OF FOOD PATHOGENS, DUE TO CROSS-CONTAMINATION OF FOOD PRODUCTS IN THE ENVIRONMENT OF THE RETAIL FOOD INDUSTRY, THROUGH THE CREATION OF SPECIFIC PROTOCOLS FOR CONTROL. FROM THIS PATHOGENIC RETAIL ENVIRONMENT. THIS PROPOSAL COULD ALLOW THE INTEGRATION OF THE HACCP SYSTEM IN THIS TYPE OF ESTABLISHMENTS WITH EFFECTIVE RISK MANAGEMENT POLICIES.
